Students completing the Certificate in Patissier have the skills to create the modern repertoire of pastries, cakes, candies and ices and have mastered the techniques needed to work as a Patissier in any kitchen.

Program Learning Outcomes


Upon completion of this program, students will be able to:

  • Demonstrate the fundamentals of mise en place: a safe, organized and sanitary kitchen workstation
  • Produce correctly prepared, nutritious and visually appealing menus and meals in a timely manner
  • Demonstrate the ability to use standard kitchen equipment safely and correctly
  • Describe the necessary techniques to function as a Patissier in a professional kitchen
